I did an old-fashioned apprenticeship at the Bell Inn, Aston Clinton in the early 80s, and worked as a chef in both the UK and overseas. Then I exchanged my chef’s jacket for a suit, and worked in product development in the food industry. During this time I travelled all over the the world looking for new ideas and learning about food trends and consumer needs. Latterly I worked in the Waitrose division as Head of Food Excellence.

In 2004 I was lucky enough to buy Lathwells. I’m passionate about using local produce. Local businesses matter, and that’s why I’ll buy as much as I can from them. Bideford is a town with such a strong local character; I want to preserve that character and keep the town thriving.

My food philosophy is ‘rustic with a twist’: fresh food, cooked and served simply in the rustic tradition, but with a light, modern touch. As for the ambience, it’s important to me that Lathwells is friendly and informal, with everyone here concentrating on your comfort and enjoyment.

I’m not precious about food and I don’t try to be. If you expect it you may be disappointed! What I am passionate about is providing good quality food at a sensible price, and making sure you have a great time and that you want to come back.
